Ayurvedic Buckwheat Pancakes

One of my favorite things to do on Sunday mornings
(or on holidays) is to make a cozy, yummy brunch.

Pancakes remind me so much of my childhood
(my parents used to make them for me and my sisters
every weekend morning). So, in my adulthood, I
continue this ritual, but I, of course,  revamp it with a
healthy twist….

So, here’s my favorite recipe for Ayurvedic pancakes.
As Ayurveda is the healing sister science of yoga,
these pancakes are warming and grounding–perfect
for balancing the “air” element in all of us when temperatures
start to drop and the winter winds are blowing!

All the ingredients are good for you—and the pancakes
actually feel really light in your belly after you eat
them (so your energy’s not zapped for the rest of the
day).

Ayurvedic Buckwheat Pancakes

Yield: Several regular-sized pancakes

•   1 c buckwheat flour
•   1 c oat bran
•   3/4 tsp baking powder
•   1 t baking soda
•   1/2 t sea salt
•   3 cups almond milk or rice milk
•   1 egg
•   2 Tbs. Sunflower or olive oil

1. Mix all dry ingredients well in a bowl.
2. In another bowl, beat egg and beat in butter, milk, and oil.
3. Add liquid mixture to dry mixture, stirring only enough to moisten. A few lumps are fine.
4. Pour onto a hot, oiled, evenly heated griddle or skillet.
5. Turn over when bubbles appear on edges and underside is light brown.

*add blueberries or banana if you like. Serve with a little
bit of warmed maple syrup and some ghee or butter, if you
like.
